Corn pakoda is a delicious and crispy Indian snack made with sweet corn kernels, gram flour (besan), and spices. Here's a simple recipe you can follow:
### Ingredients:
- 1 cup sweet corn kernels (boiled)
- 1 cup gram flour (besan)
- 1-2 green chilies (finely chopped)
- 1 medium-sized onion (finely chopped)
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon coriander powder
- A pinch of baking soda (optional, for extra crispiness)
- Salt to taste
- Water as required
- Oil for deep frying
- Fresh coriander leaves (finely chopped)
### Instructions:
1. **Boil the corn**: Boil the sweet corn kernels in water until they are tender. Drain them and set them aside to cool.
2. **Prepare the batter**: In a mixing bowl, add the gram flour, chopped green chilies, onion, cumin seeds, coriander powder, turmeric powder, red chili powder, and salt. Mix well.
3. **Mix corn with the batter**: Add the boiled corn to the gram flour mixture. Add water gradually to make a thick batter. Make sure it’s not too watery. Optionally, add a pinch of baking soda for extra fluffiness.
4. **Fry the pakoras**: Heat oil in a deep frying pan. Once the oil is hot, drop small portions of the batter into the oil, forming pakoras. Fry them on medium heat until they are golden brown and crispy.
5. **Drain and serve**: Remove the pakoras with a slotted spoon and place them on paper towels to drain excess oil.
6. **Garnish and enjoy**: Garnish with freshly chopped coriander leaves and serve hot with chutney or ketchup.
